Black tea, sometimes known as "red tea", came to be sometime in the 17th century. Prior to that, the people of China drank only greens and oolongs. Legend has it that an army troop entered Fujian province and decided to take shelter at a tea factory. This caused a delay in production and the tea leaves lay out drying under the sun longer than normal. The prolonged oxidation caused the tea to turn a deep dark red color. To save the tea from degrading further, the farmers placed the crop over a pine fire - and Lapsang Souchong was born! From there the black tea process was refined and became quite the hot commodity with British traders. Black tea was sold at high prices and became a drink that indicated wealth and status. In the mid 1800s, the prices of tea became affordable enough for the commonfolk, and the practice of afternoon tea flourished. It's now the most popular style of tea in the world thanks to its bold flavour, versatility, as well as the boost of energy it gives drinkers.
