This particular batch is made with late-harvest, yabukita cultivar Japanese tea leaves, which are carefully and lovingly roasted at ~200° F. This roasting process significantly reduces any astringency from the late harvest leaves, resulting in a naturally sweet, gentle brew with notes of wood and caramel.
