Wu Lu (霧綠), loosely translated as Emerald Cloud or Jade Cloud, is a name that is often given to higher grader (though not luxury) pan-fired green tea.

This matcha is harvested and produced from spring buds and tender young tea leaves. Our matcha tea plants are grown in partial sunlight (i.e. they are covered with a canopy) for a few weeks each spring, which boosts the amount of chlorophyll in the leaves, thereby increasing the concentration of anti-oxidants.
After harvest, the tea is meticulously ground into very fine particles and shipped to Two Hills, where we keep it in a temperature-controlled room for optimal quality and freshness!

Turmeric is a flowering plant, native to Asia. Ayurveda (a system of medicine with roots in ancient India) has treasured turmeric over literally thousands of years; conveniently, this widespread plant is also a widespread ingredient in Asian cooking.

This is a lightly oxidized oolong with notes of flowers, poached leafy greens, and a buttery finish.
While there are varying levels of oxidization available for this tea, from very green (flowery flavour) to highly oxidized (ideally charcoal fired, and much warmer in energy), this particular batch is of a modern style, and therefore more lightly oxidized.

Tie Guanyin (Iron Guanyin, or Buddhist Goddess of Mercy | 鐵觀音) is one of the most popular oolong teas in China. This famous style of oolong tea is originally from Anxi, in Southern Fujian Province, and is one of the most treasured teas in Guangdong (previously known as Canton).
While Anxi is known as the birthplace of Iron Goddess, we had long been unsuccessful in finding an organic garden that we would be proud to source tea from.
Since the area is quite famous, too many farms practice an intensive kind of agriculture that is not considered sustainable.
Through some good friends in Huang Shan, we learned of an organic tea garden in San Mi, around 250km inland from Anxi. The garden is located on mountainous land at 500m (~1500ft) above sea level, well away from large industrial populations. This garden farms some very tasty organic tea!

Jasmine tea is one of the most highly prized treats in Northern China and (of course), Fujian Province in particular. This fragrant brew is, however, not easy to handcraft.
These jasmine pearls are crafted using the traditional method:
- First, the organic, early spring tea leaves are carefully processed into green tea. They are lightly steamed to prevent oxidization, then gently rolled into beautiful 'pearls' to be carefully stored until the late summer harvest of jasmine blossoms.
- Once the jasmine blossoms are ready, they are blended and piled together with the tea leaves and left overnight, allowing the delicate flavour of the jasmine to scent the leaves. This process is repeated until the tea artisan is satisfied with the aroma of the tea.
